Applesauce Bread

November 8, 2008

Pretty soon I’ll stop posting recipes that I haven’t made. If I don’t do this, I’ll forget where I saw them, and I really want to try them. This looks yummy. Another Martha.

Applesauce Bread

4 cups flour
2 Tbsp cornstarch
2 cups sugar
4 tsp baking soda
2 tsp cinnamon
1 generous tsp cloves
1 generous tsp allspice
1/2 tsp nutmeg
1/2 tsp salt
1 cup vegetable oil
3 cups applesauce
1-2 whole apples, chopped (I like golden delicious or macintosh apples)
1 cup chopped pecans or raisins (optional)

Mix all the dry ingredients together. Combine the oil, applesauce, and apple chunks all together. Add to the dry ingredients, mix well, but do not overmix!!Spoon into 2 greased 5 x 9 inch pans. I like to sprinkle on a few generous tablespoons of brown sugar at this point on top of the bread. It creates a yummy sugary crust. Bake at 350 degrees for one hour. Allow to cool completely before inverting onto plate or wire racks.
