Crispy Waffles with Buttermilk Syrup

My sister shared this with me years ago, and it’s our favorite waffle recipe!  There’s no sugar in these waffles, so it’s a great base for whatever toppings you choose, without making it overly sweet.  

The syrup is ah.maz.ing.  Even my super picky kids love it.  Just yesterday one of them asked for a straw so he could drink the syrup left on his plate!  I said no.  But it’s really that good.  I linked up with this party!



Waffles

2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
4 eggs
2 cups buttermilk
1/2 cup melted butter

Combine dry ingredients. Measure buttermilk. In medium bowl beat eggs. Alternating, add flour mixture and milk to eggs, beginning and ending with flour. Stir in melted butter. Cook in a hot waffle iron.

Buttermilk Syrup

1/2 cup butter
1/2 cup buttermilk
1 cup sugar
1 tsp corn syrup
1 tsp baking soda
1 tsp vanilla


Boil butter, buttermilk, sugar and corn syrup. Remove from heat, whisk in baking soda and vanilla. Serve warm.

*Use a saucepan with tall sides…once you whisk in the baking soda, it will foam up!  Fun for the kids to watch.  Do NOT double unless you use something large, like a stock pot.  Just trust me.
