BBQ Chicken Pizza

So easy, and so good!


Version 1:
1 Boboli pizza crust (or make your own)
1/2 c BBQ sauce (use a good BBQ sauce)
1 chicken breast, cooked and cut into 1/2″ pieces
1 c mozzarella cheese
1/4 red onion, sliced then quartered

Version 2:
Use bread dough for one loaf of bread
corn meal (sprinkle on greased pan before spreading dough out)
3/4 c BBQ sauce
2 chicken breasts, cooked and cut into 1/2″ pieces
1 1/2 c cheese (mozzarella and cheddar)
1/4 red onion, sliced then quartered

Spread BBQ sauce onto pizza crust, top with cheese, onions, chicken, and sprinkle with a little more cheese. Version 1: bake directly on the oven rack at 450 degrees for 8-10 minutes. Version 2: bake dough at 365-400 degrees for 10-15 minutes until it starts to brown. Remove from oven, add toppings, return to oven until cheese is melted and crust is done, about 10 more minutes.

*I didn’t actually measure anything, so it’s all approximated. Chicken can be grilled, baked, or browned in a frying pan. [Chicken should not be boiled. Rarely should chicken ever be boiled.] Today I just cooked it in some olive oil and then tossed it in some sauce after I cut it up. Usually I add some BBQ sauce while it’s cooking. Couldn’t tell a difference.

*I made 2 pizzas tonight, one with Joe Morley’s BBQ sauce and one with Kraft. There was a huge difference, Joe’s totally won. No more Kraft on my pizza.

*Other cheeses may be used. Add in a little cheddar, or for a more gourmet pizza, try a few ounces (each) of provolone and gouda and sprinkle cooked pizza with chopped fresh cilantro.
