Banana Muffins

Slightly modified, another good one from the Ivory Family Favorites.

1 c sugar
1/2 c canola oil
2 eggs
3 ripe bananas, mashed
2 c flour
1 t baking soda
1/2 t salt

Cream sugar and oil. Add eggs and mashed bananas and beat. Add flour, soda, and salt. Pour into greased or lined muffin tins. Bake at 350 degrees for 18-20 minutes. Makes 18-24 muffins. Also fun to make for kids in mini-muffin tins.

My mom gave me two of these muffin tins. They were her mother’s (and possibly her grandmother’s, she wasn’t sure). My grandma passed away nearly 15 years ago, so I love to make muffins because it makes me think of her.
