One our favorite recipes. Every family has their own version of this dish, which makes it a comfort food for sure! This is a combination of my mother and mother-in-law’s recipes. I grew up eating it over rice, Hubs didn’t. You can’t go wrong either way, but the rice will make it go farther.
Chicken & Broccoli Casserole
2 boneless skinless chicken breast halves, cooked and cubed
2-3 stalks broccoli, cut and steamed until tender crisp
1 can cream of chicken soup
1/2 cup milk
1/2 cup mayo
1 cup shredded cheddar cheese
2 tsp lemon juice
1/2 tsp curry powder
bread crumbs or stuffing (whole or crushed)
In a 7×11 (or square) baking dish, arrange broccoli on bottom, and then layer with chicken. Combine soup, milk, mayo, cheese, lemon juice and curry powder in mixing bowl. Pour over chicken. Top with bread crumbs. Bake at 350 degrees for about 30 minutes, or until bread crumbs are lightly browned. Serve over brown rice.
