I have a soft spot in my heart for Spanglish. Got this one from Pillsbury’s Fix it Fast cook book. We all thought it was good, and it really was fast. This has lots of modifying potential to be even better.
4 frozen breaded chicken patties (or large tenders)
2 cups uncooked instant rice (I made regular brown rice since I had the time)
2 cups water
1 1/2 cups salsa
2 cups shredded cheese (calls for American, we used cheddar)
Cook chicken patties according to package directions.
Cook rice according to package directions, stir in 1/2 c of the salsa.
Combine remaining 1 cup salsa and the cheese; cook over low heat until cheese is melted, stirring occasionally.
Serve chicken over rice and top with cheese sauce.
