It would have been grilled cheese night, but we’re still in the midst of our cheddar famine (which will be ending tomorrow!) Not too bad for a once-in-a-while meal.
Butter one side each of two slices homemade white bread. Top the unbuttered side of one slice of bread with mozzarella cheese and pepperoni. Grill buttered sides until golden brown. Dip in creamy tomato soup.
*I like to microwave the pepperoni for 30-60 seconds in a paper towel to get some of the grease out and crisp them up a bit.
