I was looking for some recipes with potatoes, and I found this. I improvised my way into an almost entirely different sandwich, but the basics stayed the same. It was really good.
1 medium potato
garlic salt
pepper
3 eggs
sliced or shredded cheddar cheese
6 slices bread
butter or margarine
Pam
1 small can green chiles
Wash and shred the potato, separate into three piles. Spray Pam onto griddle and cook potatoes about 5 minutes, until golden. Spray potatoes with Pam and turn. Sprinkle with garlic salt and pepper. Cook until golden.
Butter the outward facing side of each slice of bread, lay buttered sides down on griddle. Top one slice of bread (per each sandwich) with sliced or shredded cheese.
Fry or scramble the eggs.
When bread is golden brown, remove from heat and put green chiles on the cheese. Top with hash browns and eggs. Season to taste. Makes 3 sandwiches.
We like ours with a ketchup/hot sauce mix.
*This would be awesome with bacon, different cheeses, just about any kind of bread, and lots of veggies…onions, green peppers, tomatoes. Lots of possibilities!
