Eggs in Toast

When I was growing up we used to make this all the time. I still love it. I’ve heard a lot of people say their grandparents used to make it. I think we got it from my grandpa. Maybe it was a Depression era food, like bread in milk.

2 slices of bread
1 egg
butter or margarine

Butter one side each of 2 slices of bread. Using a small cup or small round cookie cutter, cut center out of both slices of bread. With bread stacked and buttered sides facing out, place on a hot griddle. Put egg in the center of the bread. Cook (both sides) until bread is golden and egg whites are cooked through. Serve with fried potatoes and a veggie sausage pattie.

*I like to butter my cut-out circles and fry them up too. I like this meal with lots of ketchup mixed with hot sauce.
