I was thinking about making deviled eggs with the left-over Easter eggs we dyed. Then I saw this post on the cookin‘ sisters blog, and it reminded me how much I like egg salad sandwiches. These were a snap, and tasty too! I didn’t measure anything, so everything is approximate.
5 hard-boiled eggs, mashed or chopped
1/4 c mayo
2 T miracle whip
1 tsp lemon juice
some garlic powder
some garlic salt
some onion powder
few grinds black pepper
1-2 squirts mustard
Combine in a medium bowl and spread over wheat bread.
Makes 3 sandwiches.
