Jalapeno Beef

This is one of the first meals I had with my future in-laws when hubby and I started dating. They won me over with beef.




4 lb roast
3 bay leaves
garlic salt
salt
pepper
cumin
oregano
1/2 c sliced jalapeno peppers
1/2 c jalapeno pepper juice

Cover the outside of meat with garlic salt, salt, & pepper. Place in a crock pot. Add bay leaves, jalapenos and juice. Add several pinches of cumin and oregano. Cover and cook on low for 24 hours, or on high for 12 hours. Remove any fat and break meat apart approximately 1 hour before serving. Serve BBQ style on grilled buns, burrito style in tortillas, or in a salad.

*As much meat as will fit into your crock pot can be used without increasing the amount of jalapenos and juice. Increasing the jalapenos will make he meat more spicy.

*If it’s more meat than you can use, just freeze the extras.

*My crockpot seems to cook a little hot. I cooked mine for 19 hours on low, and it was perfect.
