Monkey Cake

Since #2 is such a monkey, we decided to make a cake fitting for his birthday! The yellow is the Wilton ready to roll fondant, and I think it tastes like sweetened clay. Hubby thought it was okay, but I’ll never buy it again. Just wanted to have something to compare my fondant recipe against. There wasn’t quite enough to do the fondant balls all the way around, so I just spaced them out a little. The kids never knew the difference.
1 package devil’s food cake mix
1 box instant chocolate pudding (small box)
3 eggs
1 c water
1/2 c canola oil
1 package chocolate chips
1 c sour sour cream

Combine all ingredients. Pour batter for 2 cupcakes (fill greased tin 2/3 full), and pour the rest into a medium oven-proof mixing bowl. Bake at 350 for 18-20 minutes, remove cupcakes. Continue baking cake for another 20-30 minutes until done, or until skewer inserted comes out clean. Let cool in bowl for ten minutes, then invert onto a cooling rack. Do not frost until cool.

*My skewer went through a chocolate chip, but at the time I thought it was gooey batter. As a result, I ended up over-baking my cake. It tasted pretty good, but it made it kind of tough.

*I used a cop-out tub of frosting

*Use a fruit roll up or fruit by the foot to make the tongue.

*This is not a beautiful cake, but not terrible for my first attempt.
