I got this recipe from my Foods class in high school. Flipping through my folder I’ve seen a bunch of recipes I want to try again (since the last time was 10 years ago). Man, I feel old saying that. Good chicken though.
1 large chicken breast, diced
1 t olive or canola oil
1/4 t salt
1/8 t pepper
1 clove garlic, minced
1/2 c cold water
1 t cornstarch
1 t (or 1 cube) chicken bouillon
2 T lemon juice
Place the first five ingredients in a medium frying pan. Cook until chicken is cooked throughout.
While chicken is cooking, combine the last four ingredients in a small bowl. Stir until cornstarch and bouillon are both dissolved. Add this mixture to the chicken and garlic in the frying pan. Cook on medium heat for five minutes or until sauce is thickened.
Serve with warm pitas and artichokes, or over warm rice.
Serves 4.
