Rocky Road Pookie

I was browsing Pillsbury’s website, and I found a recipe for a rocky road pizza cookie. Somehow I don’t have a pizza pan, so I made a cookie pie instead…a pookie. Or a pikie? I like pookie better. It was really yummy, I’m making it again this Sunday.



1 3/4 c chocolate chip cookie dough
1 c miniature marshmallows
1/3 c salted peanuts
1/2 c chocolate chips
1/4 c caramel topping

Heat oven to 350. Grease 10″ pie plate. Press cookie dough evenly into pie plate to form crust.
Bake 12-17 minutes or until light golden brown. Sprinkle marshmallows, peanuts, & chocolate chips evenly over crust. Drizzle with caramel.
Bake 8-10 minutes longer or until topping is melted. Cool completely, about 1 hour 15 minutes. Cut into wedges.

* Mine only needed about 4 minutes the second time in the oven.

* This would be really good with some vanilla bean ice cream.

* I made a batch of my own cookie dough. Any kind will work.
