Stuffed Crust BBQ Chicken Pizza

I think this is one of the best pizzas I’ve ever made. Fresh ingredients, good dough…oh, it was so yummy! We ate the leftovers for lunch the next day, and it was so much better than leftovers from pizza-place pizza. Use this dough recipe, and you’ll never use anything else.
1 recipe pizza dough
6 string cheeses
favorite bbq sauce (Joe Morley’s)
lots of shredded cheese (didn’t measure, used cheddar and mozzarella)
bell pepper, sliced
1/4 red onion, sliced
1 fresh tomato
1 chicken breast, cooked and cubed, and tossed in bbq sauce (or cook it in bbq sauce)
corn meal

Make pizza dough, roll out to fit pan. Sprinkle greased pan with corn meal. Place dough on pan. Line edge of dough with unwrapped string cheese (place about 3/4 inch in from crust). Fold edge of dough over cheese and seal (I used a fork). Pierce dough with fork to avoid bubbles. Bake in a 500 degree oven for about 4 minutes. Remove and add toppings: bbq sauce, cheese, chicken, onion, pepper, tomato, and more cheese. Bake an additional 8-10 minutes until cheese is melted (or in our case, just beginning to brown).

*I don’t know how many string cheeses I used because #2 kept stealing and eating them.

*If you have yellow squash, shred it and put it underneath the cheese. I haven’t done it, but I’ve heard you can’t taste it, and it’s always great to sneak more veggies in!
