Mickey Mouse Waffles

My sister made these awesome waffles the day after she ran the St. George Marathon! I didn’t think to take a picture before I ate my bacon and eggs, so it’s just a plain, bare waffle. Even picky #1 and picky #2 ate them! They were really good. She said they don’t taste the same if they’re not made in the Mickey Mouse waffle iron, but I’m willing to try.


HRM’s Favorite Waffles (HRM = Her Royal Majesty)

2 C flour
1 t baking soda
1 t baking powder
1 t salt
4 eggs
2 c buttermilk
1 c melted butter

Combine dry ingredients. Measure buttermilk. In medium bowl beat eggs. Alternating, add flour mixture and milk to eggs, beginning and ending with flour. Stir in melted butter. Bake in a hot waffle iron, preferably Mickey Mouse.

*My sister uses 1/4 to 1/2 cup butter. Still tasted great to me!
