Eyeballs!

This is one of our very favorite Halloween treats!  This is a great one for kids to help with, they love seeing the eyeballs come together!  And maybe it’s a gross boy thing, but my boys think it’s hilarious to eat a bloody body part.

Oreo Truffle Eyeballs

1 bag Oreo Cookies, ground in a food processor or blender

8 oz cream cheese, softened
8-12 squares vanilla almond bark
plain m&m’s candies
1 small tube red decorator icing
Mix ground oreos and cream cheese until well combined. Form into 1 inch balls and place on cookie sheet. Refrigerate until firm.
Melt white almond bark according to package directions.
Dip Oreo balls in the almond bark and place onto parchment or wax paper. Immediately place an m&m (m side down) into the top of the eyeball. Let almond bark harden.
Pipe the red icing onto eyeballs for bloodshot markings.
*I usually use about 8 squares of almond bark.

*Sometimes I use half almond bark and half white chocolate chips.  The coating will be a little softer if the two are mixed.

*I’ve gotten lazy, and instead of grinding the cookies, I just put them in my mixer and beat them up for a while with the paddle attachment.  It will leave chunks in the truffles, but the cream cheese will soften them.
