Walking Tacos

I found this on Tasty Sensations (welcome back Heidi!). Super easy and yummy. Hubby isn’t a fan of fritos, but they were one of the few things I could eat when #2 was nursing (and I had to accommodate his milk/soy intolerance). Anyway, I like fritos, and he thought it was great with bread and butter. Next time maybe I’ll be super nice wifey and make him some breadsticks. I want to try these.

Chili:
1 lb. ground beef
1 small onion, finely chopped
1 can chili beans in sauce
1 can kidney beans
1 can corn
1 can (15 oz) tomato sauce
1 can (6 oz) tomato paste
1 can diced tomatoes with chilies
2 TBS. chili powder
1 tsp. salt
1 tsp. pepper

Brown beef with onion, drain. Add all other cans and bring to a boil. Simmer for 30-45 minutes on low.

Pour over: Individual Size Bags of Fritos chips

Top with:
Shredded Lettuce
Diced Tomatoes
Cheese
Sour Cream

*Original recipe calls for 2 tsp salt, but it was a little too much for us.

*We subsituted black beans for the kidney beans.

*We topped ours with fritos instead of putting them on the bottom.
