Banana Muffins

Another great one from the Favorites Cookbook. These are light and fluffy, and it’s easy to eat 6 in one sitting!
1 c sugar
1/2 c canola oil
2 eggs
3 ripe bananas, mashed
2 c flour
1 t baking soda
1/2 t salt

Cream sugar and oil. Add eggs and mashed bananas and beat. Add flour, soda and salt. Pour into greased or lined muffin tins. Bake at 350 degrees for 18 to 20 minutes. Makes 18-24 muffins.

*I don’t mash my bananas first, I just throw them in the mixer and let it do the work.

*Last time I made these I did part applesauce/part oil. They were perfect.
