Buttermilk Banana Bread

June 8, 2009

My awesome neighbor Jami gave me this recipe, and it’s fabulous! I think my favorite part is the crust.

3 c flour
1 1/2 t soda
2 1/2 c sugar
1 c buttermilk
1 1/2 t vanilla
1 1/2 t almond extract
1 c oil
1/2 c butter, melted
3 eggs
1 1/2 c nuts (pecans or walnuts)
3 bananas, mashed

Combine and pour into 3 8×4 inch pans or 2 9×5 inch pans. Grease and flour pans. Bake at 350 for 45 minutes, reduce heat to 325 and bake an additional 15 minutes. Let cool for 5 minutes in pans, remove to finish cooling. While bread is still hot, poke holes all over for glaze.

Glaze:
3/4 c sugar
1/4 c fresh squeezed orange juice
1/2 t vanilla
1/2 t almond extract
2 t butter, melted

Combine, make sure sugar dissolves, pour on bread.

*Since Hubby is opposed to orange flavor in any form, I put the glaze on one and left one naked. Either way, yum!

*Since my family doesn’t like nuts, I put them in this time for me, but I’ll leave them out next time.
