Chili Ghetti

I found this in my Favorites cookbook. I thought it looked a little like someone said, “I don’t have time to go to the store. What’s in my pantry?” I thought it kind of tasted like it too. Hubby thought it was okay, I didn’t love it. He said he might want it again sometime.

1/2 lb lean ground beef
1 small onion, chopped
1 (15 oz) can petite diced tomatoes
1 (15 0z) can chili
4 oz spaghetti
1 1/2 c grated cheddar cheese
1/2 c sour cream
1/4 c fresh grated parmesan cheese

Brown ground beef and onions, drain fat. Stir in tomatoes and chili. Simmer 45 minutes. Meanwhile, cook spaghetti; drain and set aside. Remove skillet from heat. Stir in grated cheddar cheese until melted. Fold in sour cream. Mix with cooked spaghetti. Spoon into 2 0r 3 quart casserole dish. Sprinkle with parmesan cheese. Cover, bake at 350 for 45 minutes.
