Homemade Burritos

June 9, 2009

My friend Andrea emailed this to me, Macye’s grocery store was sampling it. Easy and yummy!

1 cup of shredded or diced chicken or hamburger (cooked)
2 15 oz. cans of refried beans
1 15 oz can of diced tomatoes
1 package taco mix

Mix all together and heat. Spoon in the center of a flour tortilla. Fold first side over, bring bottom of tortilla up then continue to complete the last fold.

Top with cheese, sour cream, salsa, etc.

*1 cup of cooked meat is roughly equivalent to 1/2 pound.

*Or use a 30 oz can of beans.

*I used refried beans with jalapenos the first time I made it. Fabulous.

*I used regular beans and diced tomatoes with green chiles the second time I made it. It adds a great little kick to it.

*These are fantastic to make ahead and store in the fridge. I’m sure they would store well in the freezer, I’m trying that today.
