Simple Italian Grilled Chicken

This came out of the coupon insert in my Sunday paper a few weeks ago. It was paired with a coupon for oil. I like when they do that.

No-stick cooking spray
3 T Olive oil
1 T lemon juice
1 T Italian Seasoning
1 t garlic salt
1/4 t ground black pepper
4 (5-6 oz) boneless/skinless chicken breasts

Coat grill pan or grill grate with cooking spray. Heat pan to med or grill to med-high (350-400 degrees). Combine olive oil, lemon juice, Italian seasoning, garlic salt and pepper in medium microwaveable bowl. Microwave on high for 1 minute. Stir.
Dip chicken in olive oil mixture to coat evenly. Place on hot grill or pan. Cook 6-8 minutes per side until juices run clear and thermometer reads 165 degrees. Allow to rest 5 minutes.

*I like to pound my chicken to an even thickness so it will cook evenly.
