I’ve been wanting to try this for a year. It originally came from a Costco cookbook, but I copied it from a copied recipe, so the instructions are very minimal. I’ll do my best at guessing how it should be done.
1 T Thai curry paste, red or green
2 t peanut/veg oil
1 15 oz can coconut milk
Fish Sauce (or soy sauce) to taste
4 chicken breasts, pounded to 1/2″
Sweet Thai Chili Sauce
Garnishes: chopped peanuts, basil, cilantro, mint
Combine curry paste and oil. Add 3/4 of the can of milk, taste. If bland, add more curry paste. Add fish sauce to taste. Add chicken and marinate overnight. Grill at medium heat. Turn once, brush with Sweet Thai Chili Sauce. Grill on both sides once more. Garnish.
