I haven’t made this yet, I’m posting it for my sister in hopes of finding a fluffly wheat bread. It looks good though, I hope I can try it soon!
Mix together:
2 1/2 c hot water
1 T salt
2 T plus 1 1/2 t oil
1/3 c honey
Turn on mixer and add:
1/2 c wheat flour
1 T plus 1 1/2 t yeast
2 1/2 c wheat flour (add slowly)
3 c white flour (add slowly)
Mix until dough pulls away from the sides of the bowl. If the dough doesn’t pull away you may slowly add additional white flour until it does.
Mix on low speed for 10 minutes. Then let the dough rest for 7 minutes. After the dough has rested, turn it out onto an oiled (not floured) countertop. Cut (do not tear) dough into 2 equal pieces. Shape into loaf and put into sprayed pans. Let rise in warm oven or on counter until doubled. Preheat oven to 350 and bake for 28-30 minutes.
*To shape my loaves I roll the dough into a long rectangle, then roll it up. Place seam side down in pan.
