I got this recipe from my mother-in-law, and I made it on vacation. Hubby had been craving beef stew for a while, and this was a great dinner! I served it with my favorite cornbread.
2 1/2 lbs beef cubes
8 med potatoes, quartered
carrots
2 bay leaves
1 package (1.5 oz) dried onion soup
2 cans mushroom soup
tomato juice to fill crockpot
Cook on low 10-12 hours, or on high 5-6 hours. Stir gently before serving.
*I threw in tons of potatoes and carrots…didn’t measure.
*I used a 64 oz bottle of tomato juice
*V8 also works
