Frosted Banana Bars…or Banana Cake

December 12, 2009

I made these and took them to a few neighbors, and they all raved about the banana cake! It’s just banana bread smothered with cream cheese frosting, but it’s so good! Even my kids will eat it. That’s how you know something is universally acceptable. I found them here.
1/2 c butter, softened

2 c sugar
3 eggs
3 med bananas, mashed
1 t vanilla
2 c ap flour
1 t baking soda
dash salt
Cream Cheese Frosting:
1 pkg (8 oz) cream cheese, softened
1/2 c butter, softened
4 c powdered sugar
2 t vanilla
Beat cream cheese and butter until fluffy. Add sugar and vanilla, beat until smooth.
For the bars, cream butter and sugar until fluffy. Beat in eggs, bananas, & vanilla. Combine the flour, soda, and salt; stir into creamed mixture just until blended. Pour into greased 15x10x1 pan. Bake at 350 for 20-25 minutes (or toothpick). Cool in pan on a wire rack. Frost.
