Honey Chile Sauce

April 29, 2010

I found a recipe for a sauce that looked really good. I didn’t have a bunch of the ingredients, so I did some major substitutions. It smelled really weird (and not very good) while I was making it, so we thought it was going to be gross. I finished it anyway. And we loved it. Thanks for the idea P90X.

1/4 c onion finely chopped
2/3 c honey, slightly warmed
1/2 c apple cider vinegar
1 tsp chili powder
1/4 t ground cumin
1 1/2 c low-sodium chicken broth
salt & pepper to taste
1/4 t dried cilantro
Coat a saute pan with cooking spray, heat to medium-high. Add onions and saute until tender. Add the honey and vinegar. Quickly stir in the chili powder, cumin, broth, and cilantro. Bring to a boil and reduce by half. Salt and pepper to taste.
*Or use 1 tsp chopped fresh cilantro. Add after seasoning with salt and pepper.
*You may transfer the sauce to a food processor or blender, blend until smooth. Then season with salt, pepper, and fresh cilantro, if using.
*May garnish with 3 Tbsp toasted, chopped pecans.
