Southwestern Ranch Chicken

I saw this here, but it originated from a demo at Sam’s Club. Random, but the chicken is yummy! I healthified my version a bit, and Hubby said it’s a keeper.

2 large boneless, skinless chicken breasts, cut in half
1/2 cup plus 1/4 cup BBQ sauce
Ranch Sauce:
1/4 c lite ranch dressing
1/4 c medium salsa
Corn Mixture:
1/2 c corn, drained
1/2 c chopped fresh tomatoes
1/2 c chopped red bell pepper
1/4 c cooked whole wheat kernels
salt to taste
pepper to taste
Marinate chicken in 1/2 cup BBQ sauce at least 15 minutes. Place chicken in glass pan and bake at 350 for 22-25 minutes, or until juices run clear. Remove chicken baste with remaining BBQ sauce. Top with Ranch Sauce, and garnish with corn mixture.
