Orange-Lemon Cake

This was a surprising delightful cake that we served to the women in my church for Mother’s Day. I also took some to my wonderful mother and wonderful mother-in-law, and they thought it was great! It doesn’t hurt that it’s super easy to make.


1 package lemon cake mix
1 package orange gelatin (3 oz)
2/3 cup water
2/3 cup oil
4 eggs
Icing:
1 cup powdered sugar
3 – 4 tsp. orange juice
In a large bowl, combine the first five ingredients; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Pour into a greased and floured bundt pan.
Bake at 350 for 35-40 minutes or until a toothpick inserted near center comes out clean.

Cool for 10 minutes in pan, then invert onto a wire rack to cool completely.

Combine powdered sugar and enough orange juice to achieve desired consistency (I needed 4 teaspoons). Drizzle over cake.
