Birthday Cupcakes

#1 tried to talk #2 into wanting a Transformer cake for his birthday.  I tried to talk him into decorating cupcakes with his friends at his party.  I won!  But mostly because I was in charge.  Most of the cupcakes I’ve seen (and baked) have a tendency to be flat and ugly.  These were pretty and rounded…just like a cupcake should be!  This cupcake was Bella’s.  She could hardly eat it, her decorations were stacked so high!

1 pkg yellow cake mix
1 pkg (4-serving size) vanilla instant pudding
4 large eggs (6 T powdered eggs + 2/3 c water)
1 c water
1/3 c canola oil
Frosting
Sprinkles
Marshmallows
Jellybeans
Any and all leftover candy that you can scrounge out of the back of the cupboard
Preheat oven to 350. Line muffin tins with papers.
Combine cake mix, pudding mix, eggs, water and oil in large bowl. Beat at medium speed with electric mixer for 2 minutes. Pour into 22-24 tins. Bake at 350 for 18-22 minutes or until toothpick inserted in center comes out clean. Cool.  Decorate with 2 dozen neighborhood friends!
