Grilled Pineapple

December 2, 2010

Since it’s been FREEZING here the last couple of weeks, now would be a good time to post a summer recipe that I never got around to!  Unfortunately, it was so long ago that the details are a little fuzzy, so when I grill pineapple again, I’ll update it here!
I was the only one who ate this, and it was delicious!  My family is so picky.

Slice the pineapple around the core (which you can then munch on).  Slice it into wedges and brush with glaze.  Now the fuzziness begins.  It had honey, lemon juice, and a couple of spices in it.  I’ll figure it out…  Grill over medium heat for about 4-6 minutes (depending on thickness), turning so you have grill marks on each side.  Do not overcook, no one likes mushy pineapple.  It should be fragrant and begin to look dry on the surface.

Yum!  Perfect summertime dessert!
