Coleslaw…a work in progress

June 27, 2011

I have a love/hate relationship with coleslaw.  I love really good coleslaw.  But most coleslaw is just okay…so I hate it.  Blech.  Nothing worse than bland coleslaw!  This was a pretty good attempt, but it wasn’t just right.  I think it needs some miracle whip…or more vinegar.  It needs something.  But not bad for my first try!  I served it on a sandwich made with leftover asian bbq chicken on french peasant bread.  Yum!

1 bag coleslaw mix

2 1/2 T sugar
pinch of salt
dash of pepper
3/4 c milk
1/4 c mayonnaise
1 T white vinegar
1 1/2 T lemon juice
2 1/2 t mustard

In a large bowl, combine sugar, salt, pepper, milk, mayonnaise, buttermilk, vinegar, lemon juice and mustard, and whisk until smooth. Add the coleslaw. Mix well. Cover and refrigerate overnight.
