If you’re looking for a super easy, yummy cake for girls night, a birthday, or any other cake-eating occasion, this is a great one! Adapted from a recipe found here.
1 pkg devil’s food cake mix (or other chocolate cake mix)
1 pkg instant chocolate pudding (small one)
1 c sour cream
4 large eggs
1/2 c water
1/2 c oil
1 1/2 c chocolate chips
1 (8 ounce) pkg cream cheese, softened
1/4 c butter, softened
2-3 c powdered sugar
1 tsp vanilla
Mix first six ingredients together with a beater. Add chocolate chips. Pour into a greased bundt cake pan. Bake in oven at 350 degrees for 45-50 mins. Remove from oven. Let cool for 20 minutes in pan, then remove to rack to finish cooling. In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the powdered sugar (start with 2 cups then keep adding more until it is nice and thick).
*I like to make it a day ahead, wrap it in plastic wrap, and let it sit overnight (in the fridge or on the counter).
*The day you want to eat it, spoon frosting into a ziploc bag, cut a corner, and squeeze it on. Or if you’re fancy, which I’m not, put it in a cake decorating bag (I don’t even know what tip would be best, I never use mine…I think the big round one) and squeeze it on. Remove plastic wrap before frosting. Once frosted, chill for 15 minutes before covering with plastic wrap (to harden the frosting).
