Pasta Bake

June 16, 2011

I had leftover alfredo sauce, leftover spaghetti sauce, leftover pizza sauce, and half a bell pepper, all of which needed to get out of my fridge.   So I made this!  My kids all cried when they saw it, and told me how yucky it looked, but I liked it.  Hubby thought it tasted kind of like pizza.  It kind of is pizza, just in pasta form.

1/2 lb pasta (I used twists)
2/3 jar (from 26 oz) spaghetti sauce
enough alfredo sauce to make your marinara creamy
2 medium tomatoes, diced
1/2 green bell pepper, diced
sour cream (I used light)
3/4 c shredded mozzarella cheese
1/4 c shredded paremsan cheese

Cook pasta according to package directions.  In an 8×8 baking dish, place half the cooked pasta.  Cover with half the sauce, half the tomatoes, half the peppers, 2/3 of the mozzarella cheese, and dot with sour cream.  Layer with remaining pasta, sauce, tomatoes, peppers, mozzarella cheese, and throw on some parmesan cheese.  Bake at 350 degrees for 30-35 minutes.
