Cooking on vacation can be challenging. You want to have delicious food that’s easy and quick to prepare. Especially when you’re at Bear Lake and you have to take everything with you, because even if the store at the KOA has what you need, you’ll pay triple the regular price for it. So I took some chicken out of my freezer, stirred together my marinade, poured it into the freezer bag with the still-frozen chicken, and threw it in the cooler for our trip. Easy, yummy. What more can you ask for?
My wonderful husband wasn’t very patient with my picture taking. He just wanted to eat! |
2 large chicken breasts, pounded even, cut in half
1/4 c Frank’s Red Hot Sauce
1/3 c BBQ sauce
2 T melted butter
1 T worcestershire sauce
Mix marinade ingredients together, reserve a few tablespoons to brush on chicken at the end of grilling/just before serving. Add chicken and marinade to a ziploc and marinate 4 hours-overnight in the fridge. Grill chicken over medium heat until just done. Chicken thighs are great for grilling, but we tend to be breast people.
