Kid Pizzas…

that my kids won’t eat.  We think they’re great actually, and they’re so easy!  We spent the weekend at Bear Lake, and this was my great idea as I was shopping at Costco for food.  The thought process was Oh, it would be so easy to get some mini Boboli crusts to throw some pizzas together.  But they’re really expensive.  Oh, look how much cheaper the pita bread is!  In the cart, little friends.  Hubby threw out his back wakeboarding, and I think this actually helped him feel better.

1 (8 oz) can tomato sauce
1 1/2 t pizza spice

shredded mozzarella cheese
pepperoni (microwave it for 30 seconds on a paper towel…crispier and less grease)
4 pita bread rounds

Preheat oven to 400.  Combine tomato sauce and pizza spice (you can do this a day ahead for better flavor).  Spread tomato sauce on pita, top with cheese and pepperoni.  Bake for 3-5 minutes directly on the rack.
