My awesome neighbor gave me this recipe a year ago, and I finally got around to making it. My kids LOVED this bread. They say they like zucchini! Music to my mommy ears. It tastes just like Amish bread, and also like Amish bread, it always collapses in the middle when I bake it. No other bread has ever collapsed on me except these two. And they taste the same. I don’t get it. I’m going to try to figure out why it’s happening and how to fix it, but until then, it’s still a delicious recipe! Even if it’s ugly.
2 cups sugar
2 cups oil
2 cups brown sugar
Mix with mixer, and add:
6 beaten eggs
By hand stir in:
4 cups grated zucchini
Then stir in:
6 tsp vanilla
1 tsp salt
6 tsp cinnamon
6 cups flour
2 tsp baking soda
Spray 4 loaf pans with cooking spray, then sprinkle bottom and sides with cinnamon/sugar mixture. Pour in batter.
Bake 55 minutes- one hour at 325 degrees.
–Makes 4 loaves, or 10 mini
*The bread was moist until the next day, then the edges went a little dry. I might try baking it at 350 for less time and see if that helps.
