Hubby loves his no-bake cookies. Probably almost as much as he loves our children. So when I found this recipe, I thought he might have another no-bake love.
(And since my sister came over for dinner, I made her try them too…)
And his verdict was “Next time let’s make real no-bakes.”
I, however, ate three for breakfast this morning. Because they’re yummy! And they’re made with cereal, so that makes it a breakfast food, right?
Hubby didn’t love them right away, but he thought they were great the next day. Which is kind of the opposite of most cookies.
1 c sugar
1 c corn syrup
1 jar (18 oz) peanut butter
6 cups corn flakes
3 oz chocolate, for drizzling
Combine sugar and corn syrup in a medium pan. Place over med-high heat and stir until the mixture comes to a full boil. Remove from heat and stir in peanut butter. Mix well.
Add corn flakes to a large bowl. Pour peanut butter mixture over corn flakes and mix well, coating all the corn flakes.
Drop cookies onto parchment or wax paper. Or in my case, aluminum foil.
Drizzle melted chocolate over cookies. Cool and eat!
