Baked Sweet Potatoes

Sweet potatoes have quickly become one of our favorite foods. They are filling, delicious, versatile and so good for you! We eat them pan fried, in stew, wild rice, soup, or even just baked like this.

Baked Sweet Potatoes
Sweet potatoes (small to medium)
Coconut oil, melted

Preheat oven to 400 degrees. Wash and dry sweet potatoes and brush with coconut oil. Prick skin with knife or fork. Place on foil-lined baking sheet and bake for 45-60 minutes, depending on the size of potatoes.

Options for serving:
Butter, salt and pepper
Coconut oil and brown sugar
Drizzle of real maple syrup
