Pomegranate Pears

January 22, 2014

This is a delicious, fresh addition to breakfast or a fun side dish for brunch. It’s a great, healthy snack, or even sweet enough for a guiltless dessert!

Pomegranate Pears
2 pears
2 oz cream cheese {or another soft, creamy cheese}
1 or 2 grinds of salt
2 tbsp Pomegranate seeds
Honey for drizzling
Dash cinnamon (optional)

Slice pears in half and remove seeds with a small spoon or melon baller.  Add salt or a dash of cinnamon to the cream cheese and stir until smooth. Fill pear cavities with cheese, drizzle with honey, and sprinkle with pomegranate seeds.

*Other soft cheeses may be substituted, such as:

  • goat cheese
  • ricotta cheese
  • drained cottage cheese
Experiment to see what you like best!  I used cream cheese because I had it on-hand.
*Hubs bought some honey from one of his Crossfit friends that raises bees.  The taste and texture are so different from processed honey!  Try to find a local beekeeper.  You will be really happy that you did.
