Guacamole {Chipotle Copycat!} is one of our very favorite snacks/appetizers/condiments. It’s so flavorful and delicious and has a little something that most other guacamoles just don’t have. My husband loves to eat at Chipotle, and he especially loves their guacamole, so of course we needed to figure out a way to recreate it at home! This recipe does it for us. Every ingredient is important, and so it the quality! So if you’re looking for shortcuts, save it for another recipe. Use real lemon and lime juice, and use a quality, flavorful salt. You won’t be sorry.
Guacamole {Chipotle Copycat!}
Ingredients:
- 3 large ripe avocados (peeled & pitted)
- 1 1/2 Tbsp lemon juice (fresh squeezed)
- 1 1/2 tsp lime juice (fresh squeezed)
- 1/2 cup fresh cilantro, finely chopped (stems removed)
- 1/3 cup red onion, finely diced
- 2 tsp jalapeno, finely diced
- 1 1/4 tsp kosher salt
Directions:
- Place peeled and pitted avocados in a medium bowl.
- Using a potato masher or fork, mash the avocados and lemon and lime juice. Leave it chunky.
- Add in all remaining ingredients and combine thoroughly, careful to keep the chunky consistency.
- Serve with your favorite tortilla chips and watch it disappear!
Notes:
- Don’t use bottled lemon or lime juice. I was in a rush and looking for shortcuts once when I made guac, so I used bottled. It didn’t taste nearly as good, and it turned brown by the next day. When I use fresh juice, it never turns brown. Learn from my mistakes…use fresh!
- At Chipotle they fry their chips fresh and then sprinkle them with salt and fresh lime juice.
