Making the Mayo
I start out by putting my egg, salt and mustard in a jar.
Put the immersion blender in on top of the egg, salt & mustard.
Then pour in the oil. It seems to work better if it can immediately start processing the egg without a lot of oil in the bell shape to begin, although it will quickly start to draw in the oil.
As the mixture starts to thicken and turn white, slowly lift the blender upward. Make sure all the oil is processed and you’re done! This usually takes me about 30 seconds. It’s really fast!
