I’m so glad you’re here, and I’m guessing you like curry as much as I do! This easy Chicken Curry is so simple to prepare, but that doesn’t mean it comes up short in flavor. This is a rich, delicious meal that we love to serve with our favorite creamy coconut rice.
This recipe was born from a curry we tried 8 or 10 years ago. Back then we were curry newbies and we were blown away by how delicious it was. When I made it again recently, we were a little disappointed, it seemed a bit bland. I decided that the difference wasn’t so much the curry itself, but that we had tried so many curries during those in-between years, that we were expecting the same type of flavor we’d had in restaurants. So I started tweaking the recipe, and after changing almost every ingredient, we ended up with this curry that we love!
We love this Chicken Curry as an awesome weeknight meal, but we also made this for my husband’s CrossFit meal group (they each make one meal, divide it 6 ways, exchange with 5 other people, and then they all have a great variety of meals for weekday lunches). We went to dinner with one of his CrossFit friends the week after I made this curry (Hi Zack!), and he mentioned how much he liked it, especially the potatoes. He’s a foodie himself, so I definitely trust his opinion…especially when he agrees with me. (That’s a joke, friends. Even though I’m serious. Ha!)
Another time I would definitely suggest making this chicken curry is for an at-home date night. If you can put the kids down early (or better yet, send them to Grandma’s house!), this goes together easily and cleans up fast…one pot for the rice and one pot for the curry! This is really an inexpensive meal too, and you can make it with better quality ingredients than you’d find in a restaurant. If you shop at Whole Foods, you can even find local produce and responsibly raised chicken, which makes all of us feel good!
