Healthier Butter Spread

The more I cook and especially the more I bake, the more I’m convinced that margarine has no place in my kitchen. I used to buy it for my family. Hey, it’s cheap. But if you’re going to the effort to bake, you might as well do it right. Aside from the health issue, butter taste better and gives better results. But it’s not like butter is a health food. I usually buy a spread like Smart Balance to put on toast and bread, but I got this idea from my awesome food storage friend Kammi. It’s cheaper, natural, and better for you than straight butter or margarine. Nothing with butter as the main ingredient is considered a health food (I wish!), but I’m a big believer in moderation. That, and less chemicals. I tried some of hers, and I thought it was great!

1 lb butter, softened
1 cup olive or canola oil (or half of each)
Place butter and oil in blender, whip. Put in an airtight container and store in the fridge.
