Devil’s Food Pound Cake

In all my excitement about the glaze, I didn’t post the cake recipe!  I love me a good pound cake, and since I didn’t actually eat any (as it was for the luncheon I didn’t go to), I just have to assume it was amazingly delicious.  Which it was.  I’m sure of it.  Hey, my platter was returned empty…it couldn’t have been bad!

1 pkg Devil’s Food Cake
1 pkg (4-serving size) instant chocolate pudding
4 large eggs (or 6 T dry egg powder + 3/4 c water)
1 1/4 c water
1/2 c canola oil (or 1/2 c pureed black beans)

Preheat oven to 350.  Grease & flour (or use the nifty Pam with flour in it!  way easier) 10″ Bundt pan.

Combine cake mix, pudding mix, eggs, water and oil in mixing bowl.  Beat at medium speed for 2 minutes.  Pour into pan and bake for 50-60 minutes or until toothpick inserted in center comes out clean.  Cool in pan for 25 minutes, invert onto serving platter, cool completely.

*Another glaze option is to heat 1/2 c canned frosting for 10-15 seconds in the microwave.  Do not overheat.  Drizzle over cake.  But THIS glaze is better!

*I pureed black beans in my blender to substitute for the oil.  The cake was moist and delicious (I made a second one for us, I couldn’t stop thinking about cake!).  My favorite though, was when #2 (my 3 year old) saw the pureed beans.  “Mom, I want some chocolate!”  “Oh, that’s not chocolate.  It doesn’t taste like chocolate.”  “But Mom, I want some chocolate!”  After several rounds of this conversation I let him have a taste.  His face was priceless for a split second…before he started spitting and gagging and dry-heaving into the kitchen sink.  Hubby and I just about died laughing!  Ahh, good times.
